“Can I delete OST files without losing email messages?” :- Yes, you can delete OST files without losing any Email. Your emails are deleted from cache locally but will be accessible as they are also stored on Exchange Server.

I think both of your doubts “Can I delete OST files without losing email messages?”, “what happens if I delete OST files?” are clear now. But make sure to make a backup of your OST Files data.

Why should I backup my OST Files if I am still able to access my emails from server?

It is very important to have a local backup of OST Files. As if, in any case the data is deleted accidentally from Outlook then you will not be able to recover it. So, having a backup is must of your important data.
