Enable IMAP on the Zoho side first, off by default: in Zoho Mail's web settings under Mail Accounts, select the account and switch IMAP Access on. Without this every client fails regardless of credentials, the automatic setup's wrong password message being Zoho's refusal wearing a misleading costume.

Handle two factor if the Zoho login has it: generate an app specific password at Zoho Accounts under Security, App Passwords, naming it Apple Mail and use that instead of the normal password everywhere Mail asks.

Add the account in Apple Mail as Other Mail Account rather than any branded option: Mail, Add Account, Other Mail Account, entering the address and the app password. When Mail asks for servers, incoming imap.zoho.com and outgoing smtp.zoho.com, both with SSL on their standard ports, 993 and 465.

Domain hosted accounts on Zoho's regional data centers need the regional hosts instead, imappro.zoho.eu or imappro.zoho.in with matching smtp hosts, the org's region visible in the Zoho admin console. Timeouts rather than password rejections are the regional mismatch's signature.
Once connected, Apple Mail treats Zoho as ordinary IMAP with folders syncing both directions and the same app password serves the Mac's Calendar and Contacts apps if you later add Zoho's CalDAV and CardDAV services, the ecosystem connecting piece by piece with the one password made for the purpose.
IMAP was off exactly as the costume metaphor predicted, enabled it, made the app password and Other Mail Account connected first try on the standard hosts. Folders syncing happily. The Outlook sibling thread got my colleague sorted the same afternoon.
