Every new email starts in Calibri 11 which looks tiny on my monitor. I want Segoe UI 12 for new mail and replies.
Outlook 2016. I found the setting once and it reverted after an update. Where does it live and why would it reset?

The setting is under File, Options, Mail, then the Stationery and Fonts button. There are three separate slots: New mail messages, Replying or forwarding messages and Composing and reading plain text messages. Set the font in each slot you care about, most people forget the reply slot and think the change did not stick.

Under New mail messages click Font, pick Segoe UI 12, OK.

Do the same under Replying or forwarding messages.

OK out of every dialog, then compose a test message and a test reply to confirm both.
As for it reverting: these fonts are stored in the MailSettings registry values under HKEY_CURRENT_USER\Software\Microsoft\Office\16.0\Common\MailSettings. Roaming profiles and some enterprise policies rewrite that key at logon, which is the usual reason a font choice comes back. If you are on a company machine ask IT whether a policy manages mail settings.
The reply slot was exactly what I had missed. Both set now and it survived a restart.
